Delicious and EASY Indian Recipe

Courtesy of my friend Lindsay, here’s her recipe* for Channa. It’s great, and she made it for me the other night, and I’ve been craving it since. If you make it, enjoy!

Need:
mustard seed (about 1 tbsp, sometimes I put more)
olive oil
1/2 an onion
1 can of garbanzo beans
1 small can of tomato sauce
1 thing of tomato paste (small small can) – I never use all of it, maybe 1/2 or 3/4 of it
peas or other vegetables (broccoli, cauliflower, green beans, etc)
turmeric powder
curry powder – optional for spice/flavor

Put some olive oil (to coat pan) and mustard seed. Heat until seeds start to pop. Throw in onions, cook a little (don’t need to cook all the way through). Add garbanzo beans, tomato sauce. Stir up. Then add tomato paste, turmeric powder (I usually put about 2-3 tbsps) and curry powder (1 tbsp maybe). Experiment with the spices. It’s different every time I make it. There should just be enough turmeric powder to make it that orangey-red color.

*I think I’m going to start randomly posting recipes. Feel free to share some of your good veggie ones or improvements to these, too!
